Assistant F&B Outlet Manager – Casa Brera – a Luxury Collection Hotel, Milan

We are currently recruiting an Assistant F&B Outlet Manager to support the smooth running of daily F&B operations across our restaurant Etereo. The role reports to the F&B Outlets Manager and requires a 360° understanding of luxury lifestyle hospitality with national and international experience in leading and training teams, promoting, and organizing events.


About Us

Located near the iconic Teatro alla Scala, Casa Brera is an authentic expression of Milan’s evocative spirit. Designed by Patricia Urquiola, the hotel boasts 101 guestrooms and 15 suites, including the refined Milanese Suite. Our sky‑bar and restaurant Etereo provides rooftop pool views and exceptional gastronomy, while guests enjoy breakfast options and classic Milanese aperitivo.


The main responsibilities of the positions are:

* Oversee F&B operations in the outlet.
* Lead the F&B team and manage daily operations.
* Apply Standard Operating Procedures and company guidelines.
* Manage controllable expenses to achieve or exceed budgeted goals.

We look for people who love to create memorable experiences around food & beverage and make a lasting impact on their team.

* This is a full‑time position, 5 days a week with 2 days off.
* The starting date is as soon as possible.


What You’ll Do


Managing Day‑to‑Day Operations

* Supervise employees and manage all day‑to‑day operations of the hotel outlet.
* Understand employee positions to perform duties in their absence.
* Maintain service and sanitation standards in the restaurant.
* Review staffing and schedules with outlet supervisors to meet guest service, operational needs, and financial objectives.
* Support management in planning, organizing, and promoting events on‑property.
* Be responsible for stock control, inventory, orders, and stockroom operations with the Purchasing department.


Leading Food and Beverage Team

* Use interpersonal and communication skills to lead, influence, and encourage others; advocate sound financial/business decision making; demonstrate honesty and integrity; lead by example.
* Encourage and build mutual trust, respect, and cooperation among team members.
* Serve as a role model to demonstrate appropriate behaviors in line with Marriott and brand values.
* Identify developmental needs and coach, mentor, or otherwise help others improve their knowledge or skills in line with Marriott.
* Develop specific goals and plans to prioritize, organize, and accomplish work.
* Ensure and maintain the productivity level of employees.
* Provide leadership, vision, and direction to bring together and prioritize departmental goals efficiently and effectively.
* Ensure compliance with all food & beverage policies, standards, and procedures.
* Ensure compliance with all applicable laws and regulations.
* Establish and maintain open, collaborative relationships with employees.
* Establish guidelines so employees understand expectations and parameters.
* Monitor alcohol beverage service in compliance with local laws.


Ensuring Exceptional Customer Service

* Provide services that exceed customer satisfaction and retention.
* Improve service by communicating and assisting individuals to understand guest needs.
* Manage day‑to‑day operations, ensuring quality, standards, and customer expectations meet daily.
* Display leadership in guest hospitality and create a positive atmosphere.
* Empower employees to provide excellent customer service.
* Act as the guest service role model for the restaurants.
* Handle guest problems and record them in the property internal system.
* Meet guests informally during meals or upon departure to gather feedback.
* Ensure corrective action is taken to improve service results continuously.
* Incorporate guest satisfaction into departmental meetings focusing on continuous improvement.
* Manage service delivery to ensure excellence from entry to departure.


Managing and Conducting Human Resource Activities

* Provide guidance and direction to associates, including setting performance standards.
* Identify educational needs, develop formal training programs, and instruct others.
* Ensure employees are treated fairly and equitably; strive to improve employee retention.
* Ensure employees receive ongoing training to understand guest expectations.
* Solicit employee feedback and review satisfaction results.
* Strive to improve service performance.
* Ensure recognition is given across areas of responsibility.


Additional Responsibilities

* Provide information to supervisors, co‑workers, and associates by phone, e‑mail, or in person.
* Analyze information and evaluate results to choose solutions and solve problems.
* Assist servers and hosts on the floor during meal periods and high demand times.
* Recognize good quality products and presentations.
* Supervise daily shift operations in F&B in the absence of the F&B Outlets Manager.
* Oversee financial aspects of the department, including purchasing and invoice payment.

What you'll need

* Experience managing daily F&B operations in upscale or luxury hospitality.
* Proven ability to motivate, coach, and engage teams to deliver high performance and service excellence.
* Comfortable working cross‑functionally and supporting departmental goals.
* Fluent in English and Italian.
* Can‑do attitude and willingness to go the extra mile.
* Solid experience in managing and training teams.
* Knowledge of HACCP policies and procedures.
* Ability to plan, organize, and promote small to medium‑size events.
* A warm, people‑oriented demeanor and team‑player attitude.
