About the Role
We are seeking a highly skilled and experienced Culinary Leader to oversee the preparation and presentation of high-quality food in our kitchen. As a Senior Food Production Manager, you will be responsible for ensuring that all culinary operations run smoothly and efficiently.
Key Responsibilities
* Direct and supervise a team of chefs and cooks to achieve exceptional food quality and presentation standards.
* Maintain high levels of food safety and hygiene in accordance with company policies and industry regulations.
* Develop and implement new menu ideas and recipes to enhance the culinary experience for guests.
* Collaborate with other departments to ensure seamless service delivery and exceed guest expectations.
* Monitor and control food costs to maintain profitability and efficiency.
* Ensure accurate inventory management and stock control to prevent waste and minimize losses.
* Conduct regular audits to identify areas for improvement and implement corrective actions.
* Provide coaching and training to junior staff members to develop their skills and knowledge.
Qualifications and Requirements
* A minimum of 8 years' experience in a senior culinary leadership role, preferably in an upscale hotel or resort environment.
* Culinary school degree and/or relevant certification (e.g., CMC, CEC).
* Strong understanding of food safety protocols, sanitation procedures, and HACCP principles.
* Excellent communication and interpersonal skills to effectively lead and motivate a team.
* Ability to work under pressure and make decisions quickly in a fast-paced environment.
* Proficiency in Microsoft Office and restaurant management software.
