The project aims to characterize, through advanced metabolomics techniques (e.g., HPLC-PDA, UHPLC coupled with Triple Quadrupole Mass Spectrometer (TQMS), UHPLC, GC-MS), the metabolic activity of these microorganisms during fermentation, examining substrates such as phenolic compounds, fatty acids, and proteins in food matrices.
