The candidate will be responsible for:
Management and control of the butcher's department profit and loss account, orders and product waste
Management and supervision of butcher's department resources
Training of butcher trainees and continuous staff training
Organisation and supervision of meat counter set-up
Customer service at the counter, both as a butcher's shop and as a restaurant
Organisation and cleanliness of working environments
Responsibility for food storage
Organisational and planning skills
