The Company
White Oak Vineyards is a new Abruzzo-based wine estate established in 2024.
The company focuses on producing high-quality DOC and DOCG wines, made exclusively from estate‑grown, organically farmed grapes sourced from selected parcels across the Abruzzo region.
For its new, privately owned winery located in Capestrano (AQ), we are seeking an experienced Head of Winery Operations to handle all the production related activities.
Role Description
The Head of Winery Operations is the technical figure responsible for coordinating, supervising and handling all production activities related to vinification, aging, bottling, and quality control. The role works closely with management, the winemaker and the viticultural team to ensure the production of high-quality wines in full compliance with company standards and current regulations.
Main Responsibilities
* Handle, manage and oversee the entire winemaking process (grape reception, fermentations, rackings, clarifications, filtrations, etc.).
* Coordinate daily activities and special operations (harvest, bottling, maintenance).
* Plan and monitor chemical and sensory analyses, interpreting results in collaboration with the winemaker.
* Work with the agronomist and the winemaker to define harvest strategies, grape selection, and ripening management.
* Oversee the aging of wines in stainless steel, wood, or other vessels.
* Prepare and maintain winery records and mandatory documentation (traceability, HACCP, SIAN registers, certifications, etc.).
* Ensure compliance with safety, hygiene, and quality standards throughout all production phases.
* Oversee and supervise bottling and packaging operations.
* Contribute to the development of new products, blends, and quality improvements.
* Collaborate with the marketing and sales departments for technical tastings and presentations.
Requirements
* Degree in Enology, Viticulture and Enology, or an equivalent qualification.
* Previous experience as a winemaker or head of winery operations.
* Strong knowledge of winemaking processes, enological chemistry, and Italian industry regulations and laws.
* Experience with organic and/or biodynamic certifications.
* Ability to use winery management software and analytical instruments.
* Proficiency in tasting and sensory evaluation.
* Excellent organizational and decision‑making skills.
* Strong problem‑solving abilities and capacity to manage critical situations during production.
* Availability to work with flexibility during harvest and peak periods.
* Fluent in English and Italian.
* Resident in Abruzzo or willing to relocate to the area (relocation package not provided).
* The role will require frequent travel across the region so an autonomous mean of transportation will be required.
Preferred Qualifications
* Experience in export‑oriented wineries and in the premium wine sector.
* International experience.
* C license.
