Position Title: Health, Safety & Hygiene Manager
Department: Operations / Quality & Compliance
Reports To: General Manager / Director of Operations
Direct Subordinates: Stewarding Supervisor, Hygiene Officer, Safety Officer
2. Position Purpose
Responsible for ensuring that all fine dining restaurant operations comply with the highest standards of hygiene, sanitation, occupational health & safety, and food safety, in order to maintain exceptional service quality, guest safety, and regulatory compliance.
3. Key Responsibilities
Develop, implement, and monitor Hygiene, Sanitation, and Food Safety standards in accordance with HACCP and applicable regulations.
Ensure all kitchen, dining, storage, and back-of-house areas meet fine dining cleanliness standards.
Supervise and manage the Stewarding team to maintain cleanliness of kitchen equipment, utensils, and operational areas.
Implement Health & Safety (HSE/K3) programs including accident prevention and emergency procedures.
Conduct regular inspections, internal audits, and compliance evaluations.
Handle and follow up on audit findings, guest complaints related to hygiene, and safety incidents.
Provide regular training to all employees on hygiene, food safety, and workplace safety.
Maintain proper documentation, inspection reports, and hygiene & safety certifications.
Coordinate closely with the Executive Chef and management to uphold food quality and cleanliness standards.
4. Authority
Recommend corrective actions or temporary operational suspension in case of serious hygiene or safety violations.
Establish hygiene and safety standards in line with company policies.
Propose procurement of cleaning equipment, PPE, and safety tools.
5. Qualifications
Minimum Diploma or Bachelor’s Degree in Hospitality, Environmental Health, or Occupational Safety.
At least 3–5 years of experience in a similar role, preferably in fine dining restaurants or luxury hotels.
Strong knowledge of HACCP, Food Safety, Hygiene & Sanitation, and Occupational Health & Safety.
Excellent leadership, communication, and analytical skills.
Detail-oriented, firm, and quality-driven.
