Hidden in the Umbrian hills, our intimate country house (12 keys, Michelin Key awarded) is built on authenticity, aesthetics, generosity, and a deep sense of place. We believe in slow luxury, honest hospitality, and food that tells a story — not of trends, but of land, memory, and emotion.
We are now looking for a Sous Chef who wants to create, lead, and grow with us for the upcoming Season **** starting 23rd of March until 1st of December **** (seasonal contract).
Your Role
As Sous Chef, you are not simply second-in-command.
You are a creative partner in shaping the culinary voice of Vocabolo Moscatelli.
Together with our Head Chef and ownership, you will:
Co-create seasonal menus rooted in Umbrian terroir
Elevate local ingredients with precision and restraint
Lead and inspire a small, ambitious kitchen team
Ensure consistency, elegance, and soul in every plate
Contribute ideas that push us forward while staying true to our identity
Maintain the highest standards of quality, hygiene, and organization
This is a role for someone who understands that luxury lies in detail — and that simplicity is the ultimate sophistication.
Who You Are
You have experience as a Sous Chef or strong Junior Sous in a quality-driven kitchen
You believe in product-first cooking and respect for ingredients
You are structured, calm under pressure, and naturally lead by example
You value teamwork over ego
You are curious, creative, and eager to grow
You speak Italian and ideally English
