Podere Spedalone Agriturismo, a renowned and picturesque farm retreat nestled in the heart of the Val D'Orchia in Tuscany, is seeking a talented and passionate Chef - Plating Specialist. If you have a flair for artistry, a keen eye for detail, and a love for creating visually stunning culinary presentations, we invite you to be part of our team.

A job description for a chef in an upscale, farm-to-table restaurant in Tuscany would require strong leadership, menu development skills, and a deep understanding of Italian cuisine and seasonal ingredients. Responsibilities include managing kitchen operations, leading and training staff, ensuring food quality and sanitation, and overseeing inventory and costs, all while integrating the philosophy of farm-to-table dining into daily practices.

Responsibilities

- Menu and recipe development: Create and update menus that feature seasonal, local ingredients, and design high-quality dishes that reflect the farm-to-table ethos.
- Kitchen management: Oversee daily kitchen operations, including food preparation, cooking, and presentation, ensuring consistency and adherence to brand standards.
- Staff leadership: Supervise, train, and mentor kitchen staff, including sous chefs, line cooks, and apprentices, fostering a positive and efficient work environment.
- Quality control: Ensure all dishes are prepared to the highest standard of quality, consistency, and presentation.
- Sanitation and safety: Maintain strict cleanliness and organization in all work areas and equipment, and ensure compliance with all food safety and hygiene standards.
- Inventory and cost control: Manage food and supply ordering, monitor inventory levels, and control food costs to stay within the operating budget.
- Ingredient sourcing: Work closely with local farms and suppliers to source the freshest seasonal ingredients for use in the kitchen.
- Guest experience: Collaborate with front-of-house staff to ensure an excellent dining experience for guests, which may include interacting with them to discuss the menu and ingredients.

Qualifications

- Experience: Proven experience in a high-end kitchen, with a strong background in Italian cuisine preferred.
- Education: A culinary degree is often preferred, but a high school diploma with significant experience may be acceptable.
- Skills: Excellent leadership and communication skills, a creative and artistic approach to food, and a strong understanding of kitchen management and cost control.
- Local knowledge: In-depth knowledge of Tuscan ingredients, culinary traditions, and local wine pairings is a significant asset.
- Languages: Fluency in Italian is essential, and English proficiency is often required for communication with international staff and guests.
