Role
Reporting to the Executive Chef, the Chef de Cuisine is the head of the kitchen in a specific outlet, responsible for overseeing all culinary operations. This role ensures the delivery of exceptional dining experiences that reflect the hotel's standards of excellence, creativity, and consistency. The Chef de Cuisine leads a team of culinary professionals, manages food quality and presentation, and drives innovation while maintaining operational efficiency and cost control.
Responsibilities
* Lead and manage the entire kitchen brigade, ensuring high morale, productivity, and performance.
* Design and develop creative and seasonal menus aligned with the hotel's luxury positioning and guest expectations.
* Ensure consistent quality, taste, and presentation of all food served.
* Monitor food preparation methods, portion sizes, and waste control to ensure compliance with health and safety regulations.
* Collaborate with the Food & Beverage Director to align culinary operations with overall guest experience goals.
* Maintain inventory levels and manage food purchasing, supplier relationships, and cost control.
* Oversee daily kitchen operations, including prep, line service, and cleanliness standards.
* Train, mentor, and evaluate culinary colleagues, fostering a culture of excellence and continuous development.
* Ensure compliance with HACCP and all local food safety and sanitation regulations.
* Coordinate with events and banqueting teams for bespoke catering and high-profile functions.
Requirements
* Minimum 5 years of culinary experience, with at least 3 years in a leadership role within a luxury hotel or fine-dining environment.
* Degree or diploma in Culinary Arts or a related field; additional hospitality management training is a plus.
* Strong leadership, communication, and organizational skills.
* Proven track record in menu development, cost control, and team management.
* Deep knowledge of international cuisines, food trends, and sustainability practices.
