Pastry Chef San Clemente Palace Venice – Provincia di Venezia, Friuli Venezia Giulia, Italia

San Clemente Palace Venice is a luxury resort housed in a 900-year-old historic building with Renaissance influences. The property features restored monastic structures, a 12th-century chapel, expansive gardens, 196 rooms and suites, and renowned dining venues. The hotel regularly hosts art installations in conjunction with the Venice Biennale and offers a blend of traditional Italian cuisine with refined gourmet experiences across multiple outlets.


Role Description

As Pastry Chef, you will lead the pastry kitchen and oversee the creation of desserts, pastries, breads, and specialty items for all dining outlets and events. You will ensure the highest culinary standards, inspire creativity, and maintain the luxury quality that defines the resort's gastronomic identity.


Responsibilities

* Leading the pastry team and overseeing daily pastry operations across all outlets
* Creating refined desserts, pastries, and bakery items aligned with the hotel's luxury standards
* Designing seasonal menus, special selections, and unique signature creations
* Ensuring impeccable presentation, taste, and consistency of all pastry products
* Managing production for breakfast, restaurants, banquets, room service, and special events
* Training, mentoring, and supervising pastry team members
* Overseeing stock control, ordering, and maintaining supplier relationships
* Implementing rigorous hygiene, sanitation, and food safety procedures (HACCP)
* Collaborating closely with the Executive Chef and F&B teams on menu development
* Monitoring cost control, waste management, and production efficiency
* Ensuring a creative, professional, and motivating work environment


What We're Looking For

* Previous experience as Pastry Chef or Senior Pastry Sous Chef in luxury hospitality or fine dining
* Exceptional pastry and dessert-making skills with a strong artistic sense
* Expertise in modern and classic pastry techniques
* Strong leadership, creativity, and team development abilities
* Excellent organizational and time management skills
* Deep understanding of kitchen operations, cost control, and food safety
* Ability to work efficiently during peak production times
* Passion for innovation, presentation, and delivering memorable culinary moments
* Fluent in English and Italian (additional languages are a plus)
