The St. Regis Rome is casting for a Sommelier.

Reporting to the F&B Service & In Room Dining Manager, the Sommelier will be part of a team of high-level professionals with a strong passion for F&B.

Your challenge

You are a bright Sommelier who is always on the lookout for new beverage trends and supervising others to do the same. When you are on the floor, you create an energy that is both welcoming and exciting. You take pride in offering our guests a diverse and trendy wine list, a warm conversation, and helpful suggestions. When you shine, our guests will look forward to relaxing with you after a long day and you lead by example to all of your team

What you’ll do

7. Represent and be the face of the hotel/bar to all guests.
8. Pair and suggest wines that will best complement each particular food menu item.
9. Request new wines and products to complement existing menu selections.
10. Research new wine trends and benchmark competitors
11. Conduct staff wine tastings per company SOP and applicable laws.
12. Conduct period inventories to ensure percentage cost is at or below budgeted levels.
13. Order and conduct inventory of specialty wine equipment and glassware.
14. Create and update wine lists for outlets or restaurants.
15. Design and implement wine promotions and incentive programs.
16. Meet with wine distributors, wineries, and purveyors to stay abreast of latest products and ensure positive vendor relationships.
17. Update and maintain wine list.
18. Attend wine tastings and training to continue self education and development.
19. Answer guest questions or concerns regarding the origin, vintage, and style of various wines.
20. Decant wines appropriately to the wine type.
21. Issue, open, and serve wine/champagne bottles, ensuring guest satisfaction.
22. Monitor inventory of wine cellar, ensuring appropriate quality and amounts of wine, proper storage and disposal of wines, and replenishing cellar as needed.
23. Train and educate server and bartender staff on wine origin, vintage, styles, and pairings.
24. Conduct vintage and BIN number checks.
25. Complete closing duties, including storing all reusable goods, breaking down goods, cleaning all equipment and areas, returning equipment to proper locations, locking refrigerators, restocking items, turning off lights, locking doors, and completing daily cleaning checklist.
26. Ensure that coolers, freezers, bread drawers, and steam wells (., gravy, soup) are set at the correct temperatures and labeled and record equipment and food temperatures on HACCP chart.
27. Complete scheduled inventories (., opening inventory) of supplies, food, and liquor to check stock and requisition necessary supplies.
28. Report any employee, guest, and/or vendor incidents and accidents to management and Loss Prevention at the time of the incident and/or accident.
29. In charge of the Restaurant Outlets in the absence of the Director of Restaurants, Bars an Events
30. Count bank at end of shift, complete designated cashier reports, resolve any discrepancies, drop off receipts, and secure bank
31. Update MICROS system menus as required.
32. Contribute to team effort by accomplishing related results as needed
33. Follow Standard Operating Procedures and brand identity guidelines
34. Comply with all health, safety and hygiene standards and policies.
35. Balance the cash register at the start and close of each shift.
36. Help others when required


What we’re looking for

37. Experience as Sommelier in luxury and lifestyle hospitality
38. Possess a good command of English and Italian
39. Great storytelling skills.
40. An excellent verbal manner and proven customer service skills.
41. Good knowledge or experience in the hospitality industry.
42. Good organization skills with an attention to detail.
43. A team Player with flexible & positive attitude.
44. Good leadership and training experience.
45. Passion for the hospitality industry.
46. Able to work in a fast paced environment & remain calm under pressure.
47. Be able to demonstrate experience in complaint handling.
48. Availability to work late nights, weekends and bank holiday as we operate 365 days a year.
