Corinthia Rome is preparing to open its doors in one of the most prestigious and historic locations in the city — and we are looking for a brilliant Canteen Chef to join our pre-opening team. This is a unique opportunity to contribute to create a synergical and remarkable Kitchen team, directly hired by our Hotel with a long term horizon. Our Canteen Chef reports to the Executive Chef and aims to organize and deliver excellent canteen meals with a passion to satisfy the colleagues, keeping a constant eye for HACCP compliance.
Responsibilities
- Managing the Canteen meals’ preparation, minimizing the wastage of food and guaranteeing the highest cleanliness and hygiene of all equipment and areas of responsibility
- Assuring agreed food standards are maintained at all times
- Liaising with the Executive Chef to ensure accurate food cost and anticipating potential opportunities
- Attending department training sessions and meetings required
- Collaborating synergically with other departments (for example, registering the food intolerances of any employees)
- Supporting the kitchen operations in times of demand
- Ordering foodstuffs as required and ensuring that stock is rotated, labelled and stored in compliance with HACCP manual and Corinthia standards
- Generally being responsible for eco‑sustainability, minimizing the wastage of utilities such as gas, electricity and water
- Ensuring that all refrigerated areas are kept clean and temperatures are maintained at correct levels and recorded in the correct manner
- Timely reporting any defects in the kitchen and in the equipment according to Hotel procedures
Qualifications
- Proven experience as Canteen Chef / Banqueting Chef preferably within Luxury Hotels
- Demonstrate skills in several parties such as pastas, seafood
