We are looking for a
Junior Sous Chef Pastry
to join our pastry brigade in a
Luxury 5-Star Hotel
, supporting the
Head Pastry Chef
and
Executive Chef
in the daily operations of the department. This is a key leadership role within the pastry kitchen, combining hands-on production, team supervision, and operational excellence, while ensuring consistency, quality, and creativity across all pastry offerings.
Key Responsibilities Pastry Operations & Quality Support daily pastry operations and ensure full readiness for service Ensure consistency in preparation, plating, and presentation of all pastry items Oversee mise en place, hygiene, and organization of pastry workstations Ensure full compliance with standard recipes, portioning, and HACCP procedures
Service & Guest Experience Ensure all pastry products meet 5-star quality, presentation, and timing standards Support smooth service during events, tastings, and high-volume operations Promote a guest-focused and service-driven culture within the pastry team
Financial & Sustainability Support portion control, waste reduction, and proper inventory rotation Maintain food cost awareness and support stocktaking activities Promote sustainable practices, seasonal ingredients, and efficient product usage
Leadership & Team Development Supervise and mentor Chef de Partie Pastry, Demi Chef de Partie, Commis, and Apprentices Support onboarding, training, and ongoing professional development of junior pastry staff Foster a positive, inclusive, and collaborative pastry kitchen culture
Creativity & Collaboration Contribute creative input to pastry menus and seasonal offerings Support tastings, promotions, and new dessert rollouts Collaborate closely with the Sous Chef Pastry and Executive Chef
Candidate Profile Proven experience in pastry kitchens within quality hotels or restaurants;
luxury hospitality experience is a strong plus Solid technical pastry skills with strong attention to detail and presentation Natural leadership abilities with the capacity to guide and motivate a team Ability to perform under pressure while maintaining consistency and precision A professional aligned with values of care, integrity, respect, inclusion, and continuous improvement
