San Clemente Palace Venice –

This majestic resort immerses guests in a 900-year-old historic building, rich in charm and Renaissance tradition. It features a collection of beautifully restored monastic structures, a 12th-century chapel, and nearly 6 hectares of ancient gardens offering breathtaking views of the city, along with 196 meticulously furnished rooms and suites – including the largest and most exclusive suite in Venice.

Annual art installations rotate throughout the property in conjunction with the Venice Biennale. Inside, the hotel seamlessly blends contemporary style with Renaissance influences, boasting six-meter-high ceilings, wide corridors, grand staircases, and intricate details such as terrazzo floors, silk-covered walls, and Murano glass chandeliers, making it one of Europe’s premier hotels for art exhibitions.

The hotel’s exceptional culinary offerings reflect the richness of Italian cuisine, complemented by refined gourmet experiences served across multiple signature dining venues. Guests enjoy a harmonious blend of tradition, artistry, and world-class gastronomy.

Role Description

As Pastry Chef, you will lead the pastry kitchen and oversee the creation of exquisite desserts, pastries, breads, and specialty items for all dining outlets and events. You will ensure the highest culinary standards, inspire creativity, and maintain the luxury quality that defines the resort’s gastronomic identity.

Your main responsibilities will include:

• Leading the pastry team and overseeing daily pastry operations across all outlets

• Creating refined desserts, pastries, and bakery items aligned with the hotel’s luxury standards

• Designing seasonal menus, special selections, and unique signature creations

• Ensuring impeccable presentation, taste, and consistency of all pastry products

• Managing production for breakfast, restaurants, banquets, room service, and special events

• Training, mentoring, and supervising pastry team members

• Overseeing stock control, ordering, and maintaining supplier relationships

• Implementing rigorous hygiene, sanitation, and food safety procedures (HACCP)

• Collaborating closely with the Executive Chef and F&B teams on menu development

• Monitoring cost control, waste management, and production efficiency

• Ensuring a creative, professional, and motivating work environment

What We’re Looking For

• Previous experience as Pastry Chef or Senior Pastry Sous Chef in luxury hospitality or fine dining

• Exceptional pastry and dessert-making skills with a strong artistic sense

• Expertise in modern and classic pastry techniques

• Strong leadership, creativity, and team development abilities

• Excellent organizational and time management skills

• Deep understanding of kitchen operations, cost control, and food safety

• Ability to work efficiently during peak production times

• Passion for innovation, presentation, and delivering memorable culinary moments

• Fluent in English and Italian (additional languages are a plus)
