Tenuta Toscanais searching for aCHEF DE PARTIE Tenuta Toscana, a distinguished new estate nestled in the heart of the Tuscan countryside, is seeking a skilled and dedicated Chef de Partie to join its dynamic culinary team.This role is ideal for a culinary professional passionate about Mediterranean and Italian cuisine and committed to upholding the highest standards of quality and service within the resort’s kitchen operations. Reporting to the Sous Chef and Executive Sous Chef, the Chef de Partie will be entrusted with managing a specific kitchen section, contributing directly to Tenuta Toscana’s reputation for luxury hospitality and exceptional dining experiences.Main duties and responsibilitiesPrepare and present dishes to the highest standard of quality, taste, and aesthetics, following established recipes and plating guidelinesEnsure consistency and precision in every service, maintaining the identity and integrity of Tenuta Toscana’s culinary philosophySupport a seamless collaboration with service staff to ensure perfect timing and guest satisfactionTake responsibility for the cleanliness, readiness, and organization of the assigned station at all timesSupervise the Commis de Partie within the section, providing guidance and support to ensure tasks are completed accurately and efficientlyCommunicate effectively with other kitchen sections and with the restaurant house team to ensure smooth operations during serviceMonitor mise en place, ensuring all preparations are completed in advance and in accordance with service timelinesWork proactively to resolve any issues within the section, maintaining calm and professionalism even under pressureSupport daily food inventories and assist with order placement in coordination with the Sous ChefInspect and receive deliveries, checking the quality and freshness of ingredients, and reporting any discrepanciesEnsure all kitchen equipment is maintained and used correctly within the assigned areaMinimize waste and contribute to portion control and cost management goalsApply and enforce strict hygiene and safety protocols in line with HACCP and Tenuta Toscana’s internal guidelinesEnsure proper food handling, storage, and labelling practicesMaintain a clean, organized, and compliant working environment at all timesReport any maintenance issues or safety concerns promptly to managementDemonstrate a proactive and respectful attitude, contributing to a positive team environmentUphold the values and standards of Tenuta Toscana in both personal conduct and culinary executionParticipate in ongoing training, tastings, and development programs to refine skills and grow within the culinary brigadeWhen requested, support private dining services and in-residence experiences, delivering bespoke meals with discretion and careRequirementsAt least 3 years of experience in a culinary role within a luxury environment, preferably in a 4 or 5-star settingGood knowledge of Italian and Mediterranean cuisine, with a particular focus on Tuscan culinary dishesStrong teamwork skills, with the ability to support and coordinate Commis de Rang and work effectively under the guidance of senior chefsAttention to detail, ensuring consistent quality, presentation, and timing of dishes during serviceGood command of both English and ItalianGood organisational skills, able to manage workload and maintain smooth operation of the assigned kitchen sectionFlexibility to work various shifts, including evenings, weekends, and holidaysProfessional grooming and appearance, aligned with the standards of a luxury 5-star environmentBenefitsFull-time contract in accordance with the Italian Collective Bargaining Agreement (CCNL)Meals provided both during working hours and on days offUniforms and laundry service providedOngoing training to enhance personal and professional developmentDiscounts on dining, wellness, and sports activities available at the resort and estateAccommodation with free Wi-Fi can be arranged upon request for those coming from outside the areaThis research is addressed to candidates of both genders with reference to Italian Law 903/77 and Law 125/91.This position is based in Tuscany. Availability of staff accommodation upon request. Candidates should have a flexible schedule with the ability to work all shifts, weekends and holidays.
