The Hotel Romazzino, in stunning Costa Smeralda, Sardegna, will reopen for the 2024 season as part of the Belmond portfolio. For this iconic hotel, we are now looking for a truly talented Restaurant Manager to join our team and play a key role in managing the restaurants and in-room dining departments within the hotel. Reporting to the hotel Food & Beverage Manager and with a dotted line to the Divisional Director of Food & Beverage South Europe, you will be responsible for ensuring a pleasant dining environment and experience for our guests while maintaining efficient operations of the departments, always providing exemplary service, high motivation and excellence among the team.
WHAT YOU WILL DO
* Manage and direct the restaurants and in-room dining outlets and service teams on a daily basis to ensure smooth operations, consistent excellence and guest satisfaction
* Develop positive relations with guests and team members, whilst remaining professional and service oriented at all times
* Contribute to the development of food & beverage product/offering to ensure that the outlets continue to evolve, improve and prosper
* Plan, direct, control, coordinate and participate in all areas and activities of the department, working closely with the Food & Beverage Manager, with the Executive Chef and the other managers of the Food & Beverage division
* Maintain a daily liaison and partnership with the kitchen team to share information, best practice and ensure a harmonious relationship between culinary and service teams
* Supervise departmental food & beverage stocks and requisitions so to ensure daily service requirements are met efficiently
* Keep a close overview of the wine and beverage stocks also conducting regular checks so that items are well kept and adequate to the business
* Be responsible for the department people daily operations, participating to recruitment, monitoring manning, and delivering on-the-job training
* Ensure appropriate processes and systems are in place to control costs, deliver both revenue and profit margins as per budget projections
* Obtain maximum control of expenditure through effective use of manpower and physical assets
* Organise brigade schedule and supervise the team with a hands-on approach, ensuring the correct completion of all required tasks in a timely fashion
* Implement regular communications with the brigade through daily line ups, 1:1’s and monthly full departmental team meetings
* Manage all team related activities, including performance evaluations, and any required disciplinary matters
* Attend all meetings required according to the hotel meetings schedule
* Check that pertinent back of house areas are always kept clean and in good working order
* Apply all safety and hygiene standards so that they are met at all times and that cleaning schedules and related equipment are well executed and organised
Requirements
The ideal candidate has in-depth knowledge of the restaurant luxury hospitality environment and has extensive experience in managing large teams
* A minimum of 5 years’ working experience in a similar position and in upscale restaurants within the luxury hospitality industry
* Hospitality degree or equivalent
* Must be fluent in Italian with and English. A third European language would represent and advantage
* Proficiency in using Microsoft Office
* Strong leadership skills and service oriented and guest focused, talented in people management, performance driven, assertive and pleasant personality
* Excellent communication skills in all aspects: verbal, written and non-verbal
* Superb organisational and interpersonal skills: you must be approachable, open-minded and fair, with perfect grooming standards
