We are looking for a Junior Sous Chef Pastry to join our pastry brigade in a Luxury 5-Star Hotel, supporting the Head Pastry Chef and Executive Chef in the daily operations of the department.
This is a key leadership role within the pastry kitchen, combining hands-on production, team supervision, and operational excellence, while ensuring consistency, quality, and creativity across all pastry offerings.
Key Responsibilities
Pastry Operations & Quality
* Support daily pastry operations and ensure full readiness for service
* Ensure consistency in preparation, plating, and presentation of all pastry items
* Oversee mise en place, hygiene, and organization of pastry workstations
* Ensure full compliance with standard recipes, portioning, and HACCP procedures
Service & Guest Experience
* Ensure all pastry products meet 5-star quality, presentation, and timing standards
* Support smooth service during events, tastings, and high-volume operations
* Promote a guest-focused and service-driven culture within the pastry team
Financial & Sustainability
* Support portion control, waste reduction, and proper inventory rotation
* Maintain food cost awareness and support stocktaking activities
* Promote sustainable practices, seasonal ingredients, and efficient product usage
Leadership & Team Development
* Supervise and mentor Chef de Partie Pastry, Demi Chef de Partie, Commis, and Apprentices
* Support onboarding, training, and ongoing professional development of junior pastry staff
* Foster a positive, inclusive, and collaborative pastry kitchen culture
Creativity & Collaboration
* Contribute creative input to pastry menus and seasonal offerings
* Support tastings, promotions, and new dessert rollouts
* Collaborate closely with the Sous Chef Pastry and Executive Chef
Candidate Profile
* Proven experience in pastry kitchens within quality hotels or restaurants; luxury hospitality experience is a strong plus
* Solid technical pastry skills with strong attention to detail and presentation
* Natural leadership abilities with the capacity to guide and motivate a team
* Ability to perform under pressure while maintaining consistency and precision
