PTenuta Toscana /ppis searching for a /ppCHEF DE PARTIE /ppTenuta Toscana, a distinguished new estate nestled in the heart of the Tuscan countryside, is seeking a skilled and dedicated Chef de Partie to join its dynamic culinary team. /ppThis role is ideal for a culinary professional passionate about Mediterranean and Italian cuisine and committed to upholding the highest standards of quality and service within the resort’s kitchen operations. Reporting to the Sous Chef and Executive Sous Chef, the Chef de Partie will be entrusted with managing a specific kitchen section, contributing directly to Tenuta Toscana’s reputation for luxury hospitality and exceptional dining experiences. /ppMain duties and responsibilities /pulliPrepare and present dishes to the highest standard of quality, taste, and aesthetics, following established recipes and plating guidelines /liliEnsure consistency and precision in every service, maintaining the identity and integrity of Tenuta Toscana’s culinary philosophy /liliSupport a seamless collaboration with service staff to ensure perfect timing and guest satisfaction /liliTake responsibility for the cleanliness, readiness, and organization of the assigned station at all times /liliSupervise the Commis de Partie within the section, providing guidance and support to ensure tasks are completed accurately and efficiently /liliCommunicate effectively with other kitchen sections and with the restaurant house team to ensure smooth operations during service /liliMonitor mise en place, ensuring all preparations are completed in advance and in accordance with service timelines /liliWork proactively to resolve any issues within the section, maintaining calm and professionalism even under pressure /liliSupport daily food inventories and assist with order placement in coordination with the Sous Chef /liliInspect and receive deliveries, checking the quality and freshness of ingredients, and reporting any discrepancies /liliEnsure all kitchen equipment is maintained and used correctly within the assigned area /liliMinimize waste and contribute to portion control and cost management goals /liliApply and enforce strict hygiene and safety protocols in line with HACCP and Tenuta Toscana’s internal guidelines /liliEnsure proper food handling, storage, and labelling practices /liliMaintain a clean, organized, and compliant working environment at all times /liliReport any maintenance issues or safety concerns promptly to management /li /ululliDemonstrate a proactive and respectful attitude, contributing to a positive team environment /liliUphold the values and standards of Tenuta Toscana in both personal conduct and culinary execution /liliParticipate in ongoing training, tastings, and development programs to refine skills and grow within the culinary brigade /liliWhen requested, support private dining services and in-residence experiences, delivering bespoke meals with discretion and care /li /ulpRequirements /pulliAt least 3 years of experience in a culinary role within a luxury environment, preferably in a 4 or 5-star setting /liliGood knowledge of Italian and Mediterranean cuisine, with a particular focus on Tuscan culinary dishes /liliStrong teamwork skills, with the ability to support and coordinate Commis de Rang and work effectively under the guidance of senior chefs /liliAttention to detail, ensuring consistent quality, presentation, and timing of dishes during service /liliGood command of both English and Italian /liliGood organisational skills, able to manage workload and maintain smooth operation of the assigned kitchen section /liliFlexibility to work various shifts, including evenings, weekends, and holidays /liliProfessional grooming and appearance, aligned with the standards of a luxury 5-star environment /li /ulpBenefits /pulliFull-time contract in accordance with the Italian Collective Bargaining Agreement (CCNL) /liliMeals provided both during working hours and on days off /liliUniforms and laundry service provided /liliOngoing training to enhance personal and professional development /liliDiscounts on dining, wellness, and sports activities available at the resort and estate /liliAccommodation with free Wi-Fi can be arranged upon request for those coming from outside the area /li /ulpThis research is addressed to candidates of both genders with reference to Italian Law 903/77 and Law 125/91. /ppThis position is based in Tuscany. Availability of staff accommodation upon request. Candidates should have a flexible schedule with the ability to work all shifts, weekends and holidays.
