We are looking for a brilliant Sous Chef to join our pre-opening team. The role will report to the Executive Chef. Conveniently located adjacent to Rome Termini Station and a short distance from the Colosseum, the 238-room Hyatt Regency Rome Central is a contemporary 5-star hotel offering premium business services and one of Italy’s most dazzling leisure rooftop experiences.\nThe hotel is also featuring a SPA, 5 food & beverages outlets and more than 1000 sqm events venues. Main duties and responsibilities Oversee daily kitchen and stewarding operations, ensuring compliance with hygiene, food safety and sanitation standards.\nEnsure the cleanliness and organization of all BOH areas, including walk-in refrigerators, freezers, kitchen corridors, storage rooms and staff lockers.\nMonitor correct use of kitchen tools, utensils, and machinery to ensure safety and durability.\nLead buffet and coffee break setups when required, maintaining presentation and consistency.\nConduct regular spot checks on food preparation, recipe compliance, portioning, and plating.\nMaintain daily shift logs and monitor break compliance.\nMonitor mise en place and verify quality of service daily, including cleanliness, table/buffet setups and service readiness.\nEnsure food quality, freshness, and consistency in all dishes leaving the kitchen.\nConduct daily and weekly inspections on food storage, labelling and expiration dates.\nAccommodate guest dietary needs and special requests, ensuring allergy procedures are followed.\nLead by example to foster a culture of professionalism, accountability and respect.\nMonitor staff punctuality, grooming, uniform compliance and overall presentation.\nCollaborate with the Executive Chef on menu creation, seasonal updates and promotional offerings in line with market trends.\nAssist in scheduling staff, managing payroll-related expenses and controlling kitchen labour costs.\nMonitor and control food cost and cost of goods sold (COGS).\nTake full responsibility for kitchen and stewarding operations during the Executive Chef’s absence. Skills and requirements: Minimum 3 years of experience in a similar role within an international kitchen environment.\nKnowledge of Asian fusion cuisine is an advantage.\nExcellent communication skills in both Italian and English, spoken.\nProficient in using kitchen management systems and standard computer applications.\nExperience in coordinating medium- to large-sized banqueting events.\nStrong organizational, time management and leadership skills.\nSolid understanding of HACCP, food hygiene and local safety regulations.\nWork weekends, holidays and on shifts when required.
