About UsWe are about to inaugurate an exclusive luxury hospitality venue in the heart of Florence, set within a prestigious former Florentine convent. The complex will include a high-end hotel, a top-tier spa – the largest in the city – and two complementary dining concepts:A gourmet evening restaurant open to both hotel guests and external clienteleA dynamic bistro serving breakfast through light lunch, with bar service and options for private events and cocktailsRole DescriptionWe are seeking an experienced and motivated Restaurant Manager, responsible for the operational, organizational, and strategic management of the property’s entire food & beverage offering. This role will play a key part during the pre-opening phase, team building, and the establishment of service standards.Key ResponsibilitiesOversee and coordinate the activities of the gourmet restaurant, the bistro (breakfast, lunch, bar), and external eventsDefine and ensure excellent service standards, in line with the luxury positioning of the venueCollaborate with the chef to define the culinary offeringsCurate every detail of the guest experience to ensure a high level of satisfactionRecruit, train, and manage the front-of-house team (maître, waitstaff, bartenders, runners)Monitor costs, margins, food & beverage cost, and contribute to budget planningManage reservations and the flow of internal and external guestsCoordinate with other departments (reception, events, spa, marketing)Contribute to the promotion of the restaurant and bistro (events, PR, social media)RequirementsProven experience (minimum 3 years) as a Restaurant Manager or Maître in luxury venues, boutique hotels, or fine dining restaurantsLeadership, strategic vision, and a strong commitment to service excellenceExcellent organizational, interpersonal, and problem-solving skillsFluent in Italian and English (a third language is a plus)Knowledge of food cost dynamics, inventory management, and F&B management softwareAvailability to work in shifts, including weekends and holidaysPositive attitude, polished demeanor, and passion for hospitalityWhat We OfferOpportunity to join a high-profile project from its inceptionRefined, dynamic, and quality-oriented work environmentPotential for professional growth and development within a growing structureCompetitive salary based on experience, with performance-based incentives
