Chef de Partie Patisserie
Castelfalfi, located between Pisa, Florence and Siena, is a luxury farmstay and a medieval village that combines hospitality, organic agriculture and real estate development.
Position location: Castelfalfi (FI).
Responsibilities
* Take full responsibility for pastry in line with orders from the Chef or Sous‑Chef.
* Manage production of all pastry products.
* Maintain responsibility for the section, including final cleaning, mise‑en‑place and ordering of food supplies.
* Follow recipes, consumption volumes and quality standards.
* Ensure smooth service flow.
* Prepare and manage inventories.
* Give instructions and manage kitchen commis and apprentices.
* Be knowledgeable of HACCP regulations and ensure they are applied.
* Monitor goods on receipt in cooperation with the responsible person.
* Stay current with new culinary trends and techniques.
Qualifications
* At least 2 years of experience in a comparable pastry position.
* In-depth knowledge of breadmaking and white confectionery.
* Punctual, organized and reliable.
* Professional appearance with understanding of techniques and equipment.
* Flexibility and problem‑solving skills.
Contract and Conditions
* CCNL Turismo – Full time.
* Salary will be assessed during selection based on experience, market and company context.
