Casa Brera, a Luxury Collection Hotel, Milan belonging to Marriott International, is currently recruiting a Sous Chef.

\n

Reporting to the Executive Sous Chef, the role will be responsible for coordinating the culinary team.

\n

This is full-time position, 5 days a week with 2 days off.

\n

The starting date is estimated in April.

\n

What You’ll Do

\n

\n
- Coordinate the culinary team and support the Executive Sous Chef in all culinary operations.
\n
- Support all the parties and coordinate the brigade during service.
\n
- Process orders in company systems, maintain relationship with the purchasing department and approved suppliers.
\n
- Review production sheet to understand variety of goods to be produced daily.
\n
- Prepare and cook food according to recipes, quality and presentation standards, and food prep checklists.
\n
- Maintain kitchen logs for food safety program compliance.
\n
- Keep Chef informed of excess food items for planning of daily specials.
\n
- Safely and appropriately use baking and measuring tools/equipment/appliances to prepare baked foods.
\n
- Check and ensure correct temperatures of kitchen appliances and food, and report issues to management.
\n
- Monitor the quality of food prepared and portions served throughout the shift.
\n
- Assist management in training, scheduling, evaluating and motivating employees; serve as a role model.
\n
- Ensure compliance with safety training and certifications.
\n
- Follow Standard Operating Procedures and brand identity guidelines.
\n
- Comply with quality assurance expectations and standards.
\n
- Comply with all health, safety and hygiene standards and policies.
\n
