CHEF DE PARTIE
Tenuta Toscana, a distinguished new estate nestled in the heart of the Tuscan countryside, is seeking a skilled and dedicated Chef de Partie to join its dynamic culinary team.
This role is ideal for a culinary professional passionate about Mediterranean and Italian cuisine and committed to upholding the highest standards of quality and service within the resort’s kitchen operations. Reporting to the Sous Chef and Executive Sous Chef, the Chef de Partie will be entrusted with managing a specific kitchen section, contributing directly to Tenuta Toscana’s reputation for luxury hospitality and exceptional dining experiences.
Main duties and responsibilities
Prepare and present dishes to the highest standard of quality, taste, and aesthetics, following established recipes and plating guidelines
Ensure consistency and precision in every service, maintaining the identity and integrity of Tenuta Toscana’s culinary philosophy
Support a seamless collaboration with service staff to ensure perfect timing and guest satisfaction
Take responsibility for the cleanliness, readiness, and organization of the assigned station at all times
Supervise the Commis de Partie within the section, providing guidance and support to ensure tasks are completed accurately and efficiently
Communicate effectively with other kitchen sections and with the restaurant house team to ensure smooth operations during service
Monitor mise en place, ensuring all preparations are completed in advance and in accordance with service timelines
Work proactively to resolve any issues within the section, maintaining calm and professionalism even under pressure
Support daily food inventories and assist with order placement in coordination with the Sous Chef
Inspect and receive deliveries, checking the quality and freshness of ingredients, and reporting any discrepancies
Ensure all kitchen equipment is maintained and used correctly within the assigned area
Minimize waste and contribute to portion control and cost management goals
Apply and enforce strict hygiene and safety protocols in line with HACCP and Tenuta Toscana’s internal guidelines
Ensure proper food handling, storage, and labelling practices
Maintain a clean, organized, and compliant working environment at all times
Report any maintenance issues or safety concerns promptly to management
Demonstrate a proactive and respectful attitude, contributing to a positive team environment
Uphold the values and standards of Tenuta Toscana in both personal conduct and culinary execution
Participate in ongoing training, tastings, and development programs to refine skills and grow within the culinary brigade
When requested, support private dining services and in-residence experiences, delivering bespoke meals with discretion and care
Requirements
At least 3 years of experience in a culinary role within a luxury environment, preferably in a 4 or 5-star setting
Good knowledge of Italian and Mediterranean cuisine, with a particular focus on Tuscan culinary dishes
Strong teamwork skills, with the ability to support and coordinate Commis de Rang and work effectively under the guidance of senior chefs
Attention to detail, ensuring consistent quality, presentation, and timing of dishes during service
Good command of both English and Italian
Good organisational skills, able to manage workload and maintain smooth operation of the assigned kitchen section
Flexibility to work various shifts, including evenings, weekends, and holidays
Professional grooming and appearance, aligned with the standards of a luxury 5-star environment

This position is based in Tuscany. Availability of staff accommodation upon request. Candidates should have a flexible schedule with the ability to work all shifts, weekends and holidays. You must possess the legal right to work in Italy.
