Compass Group Italia S.P.A., the Italian division of Compass Group PLC – a global leader in foodservices with over £40 billion in annual revenue – is looking for a Corporate Executive Chef to strengthen its team based in Milan, with regular travel across operational sites.
The selected candidate will play a key role in elevating culinary standards, supporting operations, and driving quality and innovation across multiple locations.
Key Responsibilities:
Management & Planning
* Support the operational management of multiple sites, ensuring alignment with company standards
* Contribute to budget planning and monitor food cost performance
* Collaborate with site teams to optimize workflows and kitchen organization
* Support procurement activities with a focus on product quality and consistency
Culinary Quality & Innovation
* Drive continuous improvement of culinary standards across sites
* Research and select high-quality food products and suppliers
* Support menu development and standardization processes
* Act as a reference point for kitchen teams, combining hands-on culinary expertise with a managerial approach
Training & Development
* Design and deliver training programs for chefs and kitchen teams across the organization
* Support the professional development of culinary staff, promoting best practices and consistency
* Ensure knowledge transfer on recipes, procedures, and quality standards
Quality & Safety
* Ensure compliance with food safety regulations, with a strong focus on HACCP standards
* Monitor food quality and service performance, identifying and implementing improvement actions
* Promote a culture of quality and operational excellence
Stakeholder Collaboration & Support Activities
* Work closely with internal teams and operational stakeholders
* Provide on-site support when needed, including travel to different locations
* Contribute to special projects, launches, and potential catering activities
Requirements
* Solid experience in collective catering, foodservice, or structured culinary environments
* Professional background as a chef, ideally combined with experience in food companies or industrial food settings
* Strong expertise in cuisine, food products, and quality standards
* Good knowledge of English
* Comfortable with digital tools and IT systems
* Degree in Food Science, Culinary Arts, or related fields will be considered a plus
