When you work in Hawaii, in addition to learning about the functional aspects of running a hotel — like the proper way to make a bed or how to best handle luggage — it’s critically important to understand Hawaiian culture and the spirit of ‘ohana, or ‘family.’ When opening the first Andaz property in Hawaii, our team participated in Hawaiian culture training to help us understand what ‘ohana truly means.
The Commis de Cuisine is familiar with the various kitchen sections and demonstrates a strong sense of teamwork. They operate in full alignment with our company philosophy, brand standards, and standard operating procedures, helping to foster a positive and collaborative working environment.
Main responsibilities include:
Supporting the Chef de Partie in preparing the mise en place and ensuring a clean, organized workstation at all times;
Maintaining professional, respectful, and ethical interactions with colleagues, suppliers, and guests;
Demonstrating a proactive team spirit and actively contributing to a culture of cooperation and mutual support;
Ensuring full compliance with HACCP and food safety regulations, including fridge temperature checks, proper food labeling, station sanitation, and appropriate use of cleaning and hygiene products;
Monitoring the proper use, care, and maintenance of kitchen equipment and tools provided;
Actively participating in training sessions and consistently applying the knowledge and techniques acquired.
Qualifications and Requirements
* Candidates must already hold a valid work permit for employment in Italy
Minimum of 1 year of previous experience, preferably within hotel or resort kitchens
Strong sense of professionalism and reliability
Ability to work under pressure and as part of a team
Flexibility to work on a rotating shift schedule
High attention to detail
Excellent command of the Italian language
